Dauvissat: the Chablis vineyards have much to be proud of

With Domaine Dauvissat, the vineyards of Chablis (Yonne) have much to be proud of. The emblematic figure of this dry white wine has over 14 hectares of limestone terroir (including Le Clos and Les Preuses), all dedicated to white wine, with the exception of Irancy, a red produced not far from Auxerre. The international reputation that precedes the 80,000 bottles produced each year is nothing new: in the 1930s, bottles of Dauvissat wine were already sought-after.
Produced biodynamically in oak barrels, Dauvissat white wines are straightforward by nature. This is true of all the appellations, including Vaillons, Séchet and Forest. In its simplest form, Chablis is pure and woody, while more complex bottles such as Forest are denser. In all cases, this Chardonnay will keep for 10 years in the cellar.
