Salon: a unique vintage to satisfy everyone
While Salon has become an iconic Champagne house, it is now run by another great name: Laurent-Perrier. Launched in 1920, the estate was taken over in 1988. Today, Salon wines are still produced in small quantities, between 60,000 and 80,000 bottles a year. Above all, Salon's approach is focused on uniqueness: a single grape variety (Chardonnay), a single cru and a single vintage. Added to this is the fact that Salon wines, as well as being made without blending, refuse to use wooden barrels or added yeast.
Another characteristic of Domaine Salon is the ageing potential of its wines. They are matured for a minimum of 10 years. But some can be kept for up to 50 years, making them the longest-keeping wines in Champagne. The estate's only cuvée is called 'Cuvée S', and each vintage is always of exceptional quality. The 1997 vintage, for example, has a nose that develops floral, hazelnut and brioche notes. On the palate, these same aromas are present, adding a creamy texture.
